While chatting with a friend, this week, she mentioned that her household tries to eat vegetarian for dinner every other night. Without even knowing why they did it, I immediately liked that big idea.
[semi-random tangent: When I started making kids' lunches for school a few years ago, I quickly saw how EASY it would be to get in the rut of making pb&j everyday. It's just so EASY. I had to create a pbj rule which would prevent me from sending pbjs 2 days in a row. It has worked well.]
The biggee reason I'd like for our family to eat less meat is because of the inordinate resources that go into meat (i.e. feeding lots of grain to cows) compared to the resources spent on non-meat options. Don't get me wrong, I'm as carnivorous as the next gal, but I do have a hunch I'll be a better steward if I try to shoot for the pbj principle.
